Cooking for One: Pepperoni Cheeseburger

This is one you don't have to worry about leftovers. You simply go to the grocery store and buy one or two hamburger patties from the meat counter, a stick of pepperoni and a package of sliced cheddar cheese. The extra pepperoni and cheese make a great snack.

Cooking for One: BBQ Meatloaf

My friend Lacy at work told me about her meatloaf and I just happened to have hamburger out that day for dinner. Well, I did not have everything she suggested so I compromised a few items and made my own.

Now meatloaf is a great leftover because you can have it the next day in a completely different way, even a different meal time. Last night I had meatloaf and coleslaw. Tonight I am having a grilled meatloaf and cheese sandwich!!

Cooking for One: Why I do this

I love to cook. It is the most rewarding thing I do for myself. It also is very hard to cook for one.  It's hard because too many people do not think they are worth the time, and many because it is so expensive with all you end up throwing out they think they can't do it.

I'm not a great cook, I think I am a good cook. I do OK. I don't get many complaints. I do not eat fancy, I do like my food to be presented nicely, and I believe it is important to eat well in life and that it does not need to be expensive.

So my hope is not to become a great food blogger, we don't need any more of those. What I hope to do is inspire some single people to start doing a little cooking for themselves. Learning how to buy and cook for takes a little effort, but the reward is tremendous. The other thing that is important to cut cost is to like leftovers. One thing I have learned about leftovers is if they are cooked right in the first place, they taste better as leftovers. I have learned to love them!!

I am looking into some inexpensive equipment that will allow me to video some of the things I make to give you a better idea of how I do it. I think for inexperienced cooks that would be a big help.  I also want to learn to write out the recipe better, especially the directions. One problem is I don't measure a lot when cooking because everything is to taste. But I am going to work on doing a better job of that, again I think the video would help me here. People that may follow my recipes should be aware, all spices and seasonings are subject to your taste. If it is something that you must use "1 pound", I will include that.

Many of the dishes I post here will be things I have changed based on someone else's recipe. Some are original, more will be as I am learning a lot about cooking from doing this, watching lots of videos, and working at 3 Dog. I have cooked for myself and others for at least 50 years, I started as a teenager. Should have gone to culinary school, but should of, could of, didn't!!!! LOL, So I am self and video taught along with things I have picked up from different chefs over the years.

I have found something I love doing and I hope will help some to maybe eat a little better, enjoy food a little more, or maybe find out that cooking is something they really enjoy.


Seasoned Pan Seared Scallops

Scallops, food made for the single person. Buy just the number you want for dinner, or as I did tonight, planned on dinner and breakfast. No waste, amazing food, and you can cook them so many ways.

My favorite is seasoned pan seared. The seasoning is my design.  The method is courtesy of a video I watched from Chef Gordon Ramsey. Thanks, chef, they cook to perfection every time. I have deviated from it a little to cook to my taste, but the method works perfectly.

Today I used my cast iron pan to cook them and they were amazing, to say the least. For me, the beauty is they can have whatever you desire for flavor and taste. The seasoning I made today was a first, won't be a last.

Tomato and Cucumber Salad

There are days where you just can't find the perfect thing to ease the hunger. Sometimes it's too hot, sometimes too cold, you don't want to cook a big meal.

Coleslaw dressing, you will never buy it again!

I love a good coleslaw with a variety of meals. It's good with fried food, pan seared, pulled pork, and BBQ ribs to name a few.

Summer's best salad: Cold Italian Pasta Salad

This is a salad I have been making for many years. It would be expensive to make if I had to buy all the ingredients and make it all, but with the help of my local Hannaford who has an Olive wagon, I am able to buy the amount of excellent Antipasto I want!
